Select high-quality, fully ripe apples. Wash them thoroughly and peel them, removing the core. Cut the apples into thin slices, approximately 6 mm in thickness. Immediately place them in a 3% saltwater solution to prevent browning caused by oxidation. After a few minutes, remove the slices, rinse them under running water to remove excess salt, and arrange them on a rack or in a suitable container. Then, expose them to sulfur smoke for about one hour. The sulfur concentration should be around 0.4% of the weight of the raw material. This step helps preserve the color and extend shelf life.
Once the sulfur treatment is complete, dry the apple slices in a dehydrator or oven at a controlled temperature of about 70°C for approximately 6 hours. The goal is to achieve a moisture content of 8–10%, ensuring they are sufficiently dried but still slightly pliable. After drying, store the apple slices in a sealed room for 15 days to allow them to soften and develop a better texture.
After this maturation period, inspect the dried apples. Remove any that show signs of mold or discoloration. Only those with good elasticity and uniform color should be selected for packaging. Finally, package the finished product in appropriate containers and prepare it for sale. This process ensures a high-quality, flavorful, and long-lasting dried apple product that is both visually appealing and delicious.
