Processing of foliar jujube fruit pods

(1) Processing of Gold Silk Jujube

The process begins with selecting high-quality, fresh, and plump jujubes that are intact and free from damage. After thorough washing, each fruit is carefully slit open, cutting about 30 to 40 pieces per fruit, while ensuring the pulp is removed up to two-thirds of the way without altering the original shape. The fruits are then soaked in a sulfite solution for several hours to enhance preservation and texture. Following this, they are thoroughly rinsed and drained before being cooked in a 45% sugar solution. After leaching, the fruits are subjected to a series of hot and cold sugar solutions to gradually increase the sugar concentration to at least 65%. This step ensures proper sweetness and moisture retention. Once the desired sugar level is achieved, the fruits are left to soak for 48 hours. Afterward, they are dried, shaped, and packed to produce the final product.

(2) Processing of Candied Dates

The production of candied dates starts with selecting well-shaped, high-quality dates with a good appearance. The dates are first sun-dried until their skin turns deep red, which helps improve texture and flavor. Next, each date is punctured to allow better absorption of the sugar solution. They are then immersed in a sulfite solution for several hours, followed by rinsing and draining. The dates are cooked in a 45% to 50% sugar solution for 10 to 15 minutes, after which additional sugar is added to raise the concentration to around 62%. The cooking continues for another 5 to 10 minutes, ensuring even sugar distribution. Finally, the dates are soaked for 48 hours to fully absorb the syrup. After drying, shaping, and packaging, the finished product is ready for sale.
