1. Raw Material Preparation. Select cherries with bright skin, small stems, short cores, uniform size, a sweet flavor, and low juice content. Remove any moldy or underripe fruits. Cut off the stems and place them in a basket. Wash the cherries twice in a sink or basin using running water—ideally three times to ensure all impurities are removed.
2. Alkali Treatment. To speed up the drying process, it's recommended to briefly soak the cherries in a boiling solution of 0.2% to 0.3% lye. Afterward, rinse them thoroughly in clean water to remove any residual lye. Then, drain the excess water by placing them in a basket for 5 to 10 minutes before proceeding to the next step.
3. Sulfur Fumigation. Place the cherries on a baking tray and move them into a fumigation chamber. Add sulfur powder along with wood chips and other combustible materials. Ignite the mixture, close the chamber door, and allow the fumigation process to continue for approximately one hour. Typically, 2 to 3 kilograms of sulfur powder is used per ton of cherries.
4. Drying and Softening. Spread the sulfur-treated cherries evenly on a baking tray and transfer them to a drying room. Initially, maintain the temperature at around 60°C. Once the fruit begins to dry slightly, increase the temperature to 75°C to 80°C. Dry for 8 to 12 hours, then remove the cherries. Any under-dried fruits should be re-dried on another tray. If the weather is favorable, you can also sun-dry the cherries. To balance internal and external moisture and achieve a soft texture, place the dried cherries in a wooden box and let them rest for 2 to 3 days.
5. Grading and Packaging. Sort the cherries into two grades based on quality standards. Grade 1 cherries have dark red stems, while Grade 2 have dark red with some pale red spots. After grading, pack the cherries into cartons according to their respective grades for final shipment.
