Wednesday was my sister-in-law's birthday, and since she happened to be visiting us in Florida, we decided to celebrate with a homemade cake! Honestly, I had been craving this particular recipe ever since my friend in Michigan introduced me to it years ago. She always made this incredible chocolate cake for our birthdays, and I missed its rich, decadent layers. So, naturally, I jumped at the chance to recreate it.
Having willing helpers certainly made the process more enjoyable. My little helper even measured and poured ingredients by herself this time—I barely lifted a finger. It’s moments like these that remind me how quickly time flies, and how much fun it is to bake with kids.
(Let’s just say we were in full holiday spirit, even in July—my son picked out his Christmas pajamas for the occasion.)
By the time the cake came out of the oven, beautifully golden brown, and we added the candles, anticipation filled the air. The suspense was almost unbearable. My youngest, Brayden, kept trying to sing "Happy Birthday," even when no one else was around. He was clearly ready to dive into the deliciousness waiting for him.
The cake itself? Pure perfection. Moist, dense, and oh-so-rich, it practically melted in your mouth. A dusting of powdered sugar and a side of fresh strawberries added just the right touch of sweetness. Honestly, every bite felt like love.
Delicious.
Since I’ve already received several requests for the recipe since sharing this on social media, I thought it only fair to share it here as well. After all, when you’ve got a chocolate cake recipe this good, you’ve got to spread the joy.
Decadent Chocolate Cake:
(Double the recipe below to create the two-layer cake shown above)
1 cup granulated sugar
3/4 cup unsweetened cocoa powder
1 1/2 cups all-purpose flour
A pinch of salt
3/4 cup Miracle Whip or mayonnaise (Yes, you read that right—the secret ingredient!)
1 teaspoon vanilla extract
Combine all dry ingredients in a large mixing bowl. In a separate bowl, whisk together 1 cup of water and 1 heaping teaspoon of baking soda. Gradually add the wet mixture to the dry mixture, stirring until smooth. Pour the batter into a greased baking pan and bake at 375°F for 35–40 minutes. Allow the cake to cool completely before frosting with your favorite frosting.
Enjoy!
