Germany invents self-dissolving milk capsules

Researchers at Martin Luther University in Germany have invented a milk capsule that is self-dissolving in hot beverages. This capsule can be conveniently used in hot drinks such as conferences and airplanes to reduce the plastic or paper packaging of milk. The invention was published in the recent issue of Chemical Engineering and Technology.
 
According to Dr. Verner of Martin Luther University, the invention of this milk capsule process is his mentor, Professor Joachim Ulizi of the Engineering Science Center of Martin Luther University. Milk capsules use a citrus peel as a capsule shell containing sugar cubes, milk and condensed milk, which dissolves automatically when the milk capsule comes into contact with hot liquids.
 
The method of producing capsules is quite simple. First, milk and sugar are formulated into milk, and then the hot milk is poured into a forming mold, and then the temperature is controlled to cool. The excess sugar at the edge of the liquid crystallizes as a function of temperature and forms a capsule containing the toffee solution. The entire production process seems to be very simple, but the researchers have mastered the optimal formulation and cooling process for producing milk capsules through trial and error.
 
At present, two kinds of milk capsules, sweet and slightly sweet, have been developed, and the original milk capsules are still being researched to meet the needs of consumers with different tastes. According to Dr. Verner, milk capsules can be produced in different shapes and can be stored at room temperature, and the capsules produced can be stored for at least 3 weeks. Their process can also be applied to Other liquid capsules, such as fruit juice concentrate capsules.
 
The team led by Professor Joachim Ulyzi began researching the capsule manufacturing process many years ago and studied how to make the crystal forming process suitable for industrial applications such as pharmaceutical capsules. Professor Ulizi said that the new self-dissolving capsules have many potential uses, such as replacing the plastic box of coffee condensed milk that is currently used extensively in conferences or on airline flights. The process invented by Professor Ulizi has applied for a patent in 2015, but it has not yet become a product. The industrial production process of a large number of cheap milk capsules needs further improvement.
